  • Accent sur la qualité et la salubrité des aliments des produits horticoles; vaste recherche en biochimie, en physiologie et en gestion physiologique de la qualité des aliments postrécolte. Progrès notamment sur le plan de la prévention de la dégradation après récolte et du rehaussement de la saveur à l'aide des principes volatils de la nature; élaboration de techniques de mesure qualitative et quantitative rapide des aromatisants volatils (microextraction en phase solide, chromatographie en phase gazeuse et spectrométrie de masse à temps de vol); analyse des métabolites secondaires des plantes dans les produits alimentaires; établissement de mesures non destructrices de la qualité des fruits par fluorescence chlorophyllienne; biologie moléculaire de la maturation des fruits (en protéomique et génomique) par rapport à leur qualité.
