  • physico-chemical and enzymatic study of meat quality parameters.
  • study of muscle metabolism (type of fibres, size and number, enzymatic activity) in connection with growth and meat quality.

Current Projects:

  • Study of the role of the buffering capacity of various components of pork and their determinism on quality
  • Extraction of pork and chicken collagen and biomedical applications
  • Characterization of the muscle fibres of pigs fed flaxseed.
  • Development of a spectral imaging system for rapid non-destructive evaluation of pork meat quality.
  • Determination of intramuscular fat content using NIR.
  • Assessment of post-slaughter practices on the meat quality of Quebec lambs.
  • Effect of weaning age and castration on cow and calf performance and on yearling steer carcass quality.
